How do I stop my horse from being so sensitive and angry as when you are on her she is fine normal flatwork but say you were to get off and back on her she would turn round to kick you and be very angry. Also if you vault on he could try to kick out and be very sensitive. When I'm riding her bareback she would chuck her head in the air. So please can someone come up with a way to calm her down release her stress and make her less sensitive. Thanks for reading.

It sounds to me as if she is in some pain, able to cope generally but once she thinks she has finished when you get off gets upset by you trying to get back on, vaulting on may hurt her back as may riding bareback, I would get her checked out physically by a vet and probably get a physio to her as well as the saddle and teeth checked.
