Depends where in the south you are. In the south west you have Bicton which is normally a big bold course with nothing too difficult although maybe not ideal for a first novice. Treborough is another nice bold course and was relatively simple last year with just one big corner. Pontispool in September always rides well and I find it a real confidence giving course for both rider and horse. Those are just my opinions though. Others may disagree!
Maybe have a look at shoestring eventing - http://www.shoestringeventing.co.uk/coursepictures.html They put up pictures of most courses. Obviously they change every time but it may give you more of a feel for which events will have the kinder novice classes and which will be more technical.
