Paid help needed weekends. Confused about law?

Currently someone helps on my yard Mon-Fri but they are self employed. If I want someone to help weekends just for a couple of hrs a day where do I stand if they are not S/E - does anyone know. I have no idea regarding insurance etc- used to just pay someone cash in yrs gone by! Advice please
