Quick towing question

Would a Mercedes E class estate be ok towing 1 550-600kg horse in a double trailer (probably IW510). The towing capacity of the car is 2100kg and I am ancient so have a pre-1997 licence. I currently tow 1 16hh horse in a single trailer and it’s fine - just want to check the extra weight of the trailer would still be ok?

Trailer empty 1000 + horse 600 = 1600 total so that leaves 500 spare to use in trailer
