If you are still looking for places, I had a great time on an authentic sheep station in NZ, found it through WWOOF'ing, it was listed in the back of the book under "non organic but WWOOF'ing principles" or something, you might be able to find something similar in the US?
It was hard work, cattle and sheep, a lot on foot (steep country), some riding. But we also went pig hunting, fishing, to the races, the pub etc. I loved it.

I've been lucky enough to do stock/cattle work in various countries, but the US is still on the wish list. If I can ever wrangle it so I have a 2-3 month gap between jobs I will be talking my way onto a proper working ranch in Wyoming or Montana. Its so interesting what's different and what's the same.
