Random question re:wintec gullets

Right, this is a bit random and I'm tired and probably not going to phrase it very well.

The gullet measure gauge thingies don't go up to big-fat-whopper-of-a-coblet size (i.e., they don't include the xx wide, xxx wide and xxxx wide wintec cob saddle gullets).

If I put the gullet's over ponio's withers to see which fits, do I go for the one that perfectly sits on his withers against his skin so there's no gaps (if that makes sense), or should it sit higher than that (so be not as wide)?

It's time to go down in width a bit (woohooo!!) but not sure whether to go down one size or two!
 
A saddler told me to sit the gullet (not in the saddle, just the metal bit) on the horse's back, level with where the studs of the saddle would sit (same place as you put the gullet gauge). I think this is what you mean?

He said that the right size should fit the horse's back, so the one with no air would be right - this is then parallel to his back once raised up in the saddle, whereas one with air is too narrow and would pinch. Does that sound like what you mean?
 
I had the wintec wide for my boy before his diet and measured the gullets they way you did.

I was told to use the one which sat on his withers but when i rode in this one the saddle was sitting on his withers and it was clearly too wide. I then used the narrower one up from that.

When the saddle fitter came to check the saddle he advised I did have the correct gullet in. I now have a different type of saddle now though as ponio went on a diet and lost 80kg!!
