Re-introducing canter!!

The horse I share damaged his tendon over a year ago before my friend brought him. He is totally sound and is now really ready to canter again. The truth is I'm a bit scared!! He has shown me already he can do it - having pi***d off with me twice, not out of nastiness just pure high spirits.

I want to try and keep it as controlled as possible but how???? I'll be riding him in field, prob 1/2 acre size area. He's a 16.3hh shire x cob and is ridden in a fulmer snaffle xx
 
I'm going to get shot down in flames BUT safety first, I'd use double bridle OR his usual bit and draw reins...remember you are no good to him strapped to a spinal board
 
When my mare damaged her tendon and was well enough again to canter I took her on a short straight line one through the woods and slightly uphill. Is there someone who can come with you from a safety point of view? I found with my horse that she was less likely to take off with me if she was in front. Once you get the first canter over with you will be fine.
