I would agree with cutting out the sugarbeet. I started feeding alpha beet in october to give my mare a bit of a boost and I have now cut it out after her performances this week.
She was going so well before all the snow but then our arena froze and was covered in snow. Last week I came very close to coming off twice (I think my pony got springs for christmas). After this I spent a session doing harder work just to tire her out.
So after the ramble, could it be that her fitness levels have risen since you got her? She could just need a longer harder session to get rid of excess energy.
As for the girthing issue. It could just be a mare thing. Most mares I have come across are sensitive when having their girth done.
