Reschooling

Hi,
Need tips on reschooling my 15hh. Got any?
Due to injury to myself, I have put the mare out on a break for around 7 weeks until I am fit to ride again and intend to start reschooling her to a better level.
As a youngster, she hadn't been broken or schooled professionally and now I am feeling the effects of that. Don't get me wrong though, she can do everything fine e.g jump etcetc as she's now 11.
Before my injury, we were using training aids to get her to work in an outline and in a more balanced fashion but found it hard to maintain that outline when the aid came off or the instructor went home! She got stubborn when asked for an outline, but with a lot of persistance did give in at times.
Her canter also is pretty bad, she runs into it and goes very fast indeed and it can very often escalate into an almost gallop if i dont hold her back. It is very flat and unbalanced and because she is going so fast she cant negociate corners smoothly or change leads when jumping and is extremely hard to sit when she gets like this in a course of jumps. She isn't a fiery horse, in fact she's the complete opposite, her problem is she just doesnt understand aids. I have tried lessons and probably need a good few more with her for both of us to achieve a more harmonious ride I have to admit, but I want to start with this a.s.a.p.
Has anyone got any tips on where to start if i want to get a calm outline and help her understand that cantering doesn't mean galloping?
Should I start from the ground, lunging or should I start riding?

Think you answered your own question here. We could come up with all sorts of ideas, probably mostly wrong since we can't see the beastie on the ground, so to speak.

We have an ex-racehorse and I'm a novice and just to make sure we got an instructor in to sort out the both of us. Not worth taking any chances imho.
