Roughly how much would it cost to buy good quality land to put ten stables up and a yard, large fields to take ten horses, planning permission etc?

it depends on where it is. 10 acres in rural scotland is going to cost a hell of a lot less than 10 acres in surrey

Round here small plots of land fetches £20,000 per acre. If it had a couple stables it would be another £20000 on top of price. Not sure how much it would be for 10 stables, but quite alot. Would you not be better off buying land with a barn and getting plannning yourself in the exsisting barn.!!!
