Sabino - a colour question for the experts

My horse has the Sabino gene. He is bay, with white stockings (white above the knees, and white hind legs. One of his hinds has white right up to the stifle) He has a large white tummy splash, and on one side the splash does come up higher than the elbow, but I have checked with CHAPS and he's not classed as Skewbald.

So...when I am asked what colour is he, do I say:
Bay?
Sabino?
Can I enter odd coloured show classes?

Wow pintoarabian he's stunning. Don't suppose he's ever had a western saddle on? We're a bit ignorant about arabs doing western in this country, but he'd go down a storm in the states!
 
Thank you. He's by Kubinec, former World Champion. He is still a baby and isn't backed yet but, I agree, he would look good with a western saddle. Shame I haven't clue about western riding but would be open to a western 'expert' in Central Scotland taking on the ride when he is ready. :D
