Saddle for non-curvy back (NOT cob)

Hi everyone.
I’m having a hard time finding Google answers to my question: what saddle brands fit a flat-backed horse?
Everything that comes up talks about a wide cob type. I have a Lusitano who has a normal-sized wither but her back is flat and the wither is the highest point. She is otherwise an “average” fit (wintec black). The thing I’m trying to avoid is curvy panels.
amerigo makes it easy on their website because they show the back profile of the horses that each of their models is made for. It would be handy if other brands did the same thing. I’m looking for a GP type for endurance riding.
I’ve got an Albion platinum Ultima dressage but the panels start so high they make contact with her about 1cm below the top of her wither which I’m not really happy with.

Even curvy panels can work on some uphill, flat backed horses if the balance point is right. This isn't that big of a challenge with the right fitter, just make sure it fits you too, it would be so easy to have you sitting WAY back on this shape of horse, and then it can be impossible to get the stirrup bars back far enough to stop you being in a chair seat. If you can sit forwards over the horse's centre of gravity they can work so much more correctly too.
