Equipe Emporio is fairly flat.

Butet deep seat fairly curved.

I would talk with a saddler as many do different shaped trees, even the well known branded ones.

Smaller manufacturers may be worth looking at for a personal service, for example, Kruger saddles will bring a whole selection of trees to a fitting, and will fit the tree to your horse before going away and then building the saddle. Kim is excellent and busts a gut to please. They do all types of saddle, will customise, will do return visits until it is right and said she would take the saddle back (within a reasonable time period) if I was not satisfied.

I had a second hand one of hers, but when I wanted a new one went for a branded one as they lose less money when sold on, and my horse was a youngster. I only lost £100 in a year for the one I bought second hand though, and I think Kim charged £70 for a full tree check, re flock (having emptied it all out) and some customisation to the flap.

Which make / brand / type of saddle has:- 1) a fairly flat tree. 2). a curved tree ?

Lots of makers have several different tree types and panel types. Flat trees are used by some of the native pony specialist makers, nick dolman saddles, some of the lavinia mitchell and balance saddles, Wow, amerigo among others but most of these use curvier trees too.

Most of the premium french brands tend to be on curvy trees as do the likes of stubben.

Then there are loads in between, some flattish and some curvyish

Was there something in particular you were looking at?

Mari I am also struggling to learn about this, I was looking at Black Country saddles (second hand) and people mention various trees on them an I have no idea which is best for which shaped horse! there's not a lot online to read (that I could find anyway) Good luck!
