Saddle woes! Advice/suggestions please.

Back in April I had HHO recommended saddler out to check the fit of my saddle. A Bates GP with Cair which I fully expected to be told to scrap and to buy another one. Anyway saddler could find nothing wrong with the way it fitted and advised me to stick with it. Which I was obviously happy about as I could keep my lovely comfy saddle and my horsey was also comfy! Fast forward 6 months and I had back lady out last week to do her 6 month or so check and apparently his saddle had been pinching him a little so she advised me to put the next size gullet in. She checked the overall fit and was happy that it fitted well everywhere else so the next day I changed to the wider gullet. Now I feel that the saddle has dropped too low onto my lads withers, and I'm sure that he's not happy with it. I have already phoned the saddler and she's coming on the 2nd November but what should I do in the meantime. My friend suggested putting the narrower gullet back in and using a really thin saddle cloth, whereas I'm wondering if I should stay with the wider gullet but try a riser pad or a thicker saddle pad. Any ideas?
