My daughter has a young pony that absolutely loves jumping. When jumping courses he's so fast between jumps that steering can be difficult but slowing him down is hard! Any ideas of schooling exercises to try and steady him abit? He's in a straight happy mouth bit.

Best advice is to get a good instructor. There are plenty of exercises to slow a pony/horse up & also sort out steering but it would be better to do these & be shown the right way to do it rather than reading a few posts.

Flatwork in around between the jumps, including circles in front of a jump but only jumping once in a while. And no, circles in front of a jump don't teach them to refuse, they teach them to focus on the riders cues and only jump when asked.
Often that rushing is a sign of lack of confidence, so pop the occasional small jump out of trot so he learns to use himself and do it properly
