When showing a foal does it make any difference if they are plaited or not? It seems some people do and some don't?
Also, for a hunter foal class, should the foal wear a fine leather in hand bridle/halter or is a leather headcollar ok? Should the mare wear a double bridle or is a plain snaffle ok? What are the main things a judge is looking for in a hunter foal?

No it should not make any difference, except the WB's like them plaited with with tape. I have done both at County level & it has always been mixed with both. Depends on your foals mane & if plaiting will improve its appearance.
 
In the Hunter class I did at GYS all foals manes were unplaited. Plaited tails are optional. Mare should wear a double bridle though
