Snatching the reins

Sisters rescued very green pony is a madam for snatching the reins when ridden, she'll pull her head right down and sister will nearly end up over her head.
Any tips on how we can stop her doing this?
 
Without seeing her ridden from what you've said, especially as pony is green I'd advise getting a regular lessons with a good instructor.
 
If it's after being ridden for a little while it's showing that she's tired.

We used to have a mare that did this. She gave a fair warning once you learned to read her and could feel her energy ball up a split second before. I learned to sit very straight and pull reins as she did. Timing was key but she soon learned that if she yanked them she was met with a barrier (not yanking the reins back but creating a block she can't pull past). I only let her take the reins if it was hot and loads of flies and she had genuine reason. I also gave her lots of neck stretching where I'd give her a signal that she could pull the reins on my terms (against a lot of advice given to me, I was told she'd take the piss if I did this) in reality it created times when it was allowed and she knew she would get some stretching so wouldn't fight for it when it wasn't allowed.

If she is just being cheeky, I would try some grass reins. Libby's do some great ones, that worked wonders on the ponies at the local riding school.
 
We use a lungie bungie on a kids pony to stop him snatching the reins from the kids. It allows him to work freely but prevents him from pulling the reins from their hands or the kids over his head.

I've never tried these... How do they work compared to side reins?

My daughter's pony has a habit of grabbing the bit and/or dropping his head so young daughter lurches forward... I had been considering a daisy rein but was advised they can pull the saddle and bridle around...
