If he wasn't in any pain or discomfort he would have a full range of movement meaning he could lift his hooves for the farrier and he would have a correct flight arc of movement therefore not dumping his toes or wearing through the toe of hoof boots so quickly.

The horse went from retired and turned away to "fun fast rides". There should be many more steps between one to the other including involving other professionals like physio and saddle fitters. Hopefully there was and they just havent been detailed.

I think you really need to involve a vet for a true assessment of the horse, his movement and condition regarding whether he is able for the work that you are currently doing with him.

So you have an old likely arthritic horse and any shoe/boot is just covering up the main issue.

cavallos themselves do not have the best breakover which may also be compounding the issue.

I have a 27yo retiree who is much better now than he was when retired 2 years ago, he could be ridden again but it definitely wouldn't be fun fast rides however much he thought he was up to it.
