well she is total fidget with head its up down poking nose etc not sure if should try a diff bit, also she doesnt think she can go forward with her head tucked up (in outline) and very awkward to get her to bend without moving in.

Idlp, have you tried lateral exercises, and perhaps riding much stronger from your leg. I know you probably know all of this, but sometimes if you take the contact away slightly and push more with legs/seat the fidgeting reduces.
make sure you are really sitting on your bum bones and weight is even

ldlp - have you tried her in a french link with loose rings? both of mine have KK so they have that 'lozenge' in the middle - all the loose bits just helps them mouth the bit more and also keeps it moving in their mouth so they find it harder to 'set' against it - my cob especially.
i have a french link just havnt found it, that was next plan to try that. to be honest bit rusty with the stressage and i do try lateral seems to go well one way but then other way is nigh on impossible
The other thing - which you are probably doing - is just lots of transitions and changes of rein, circles, serpentines etc The more you do the more she has to listen to you and also you will encourage the bend in her neck evenly on both sides.
