Looking for advice…

Has anyone towed with an Audi SQ5 petrol? I’m not sure if a petrol V6 will still manage.
This would be for 1x 16hh horse in a 506 or a 511.

The towing capacity is pretty low. Even on the 2015-2017 models the maximum towing capacity is less than the gross weight of an Ifor 506 or 511 so I wouldn't personally be comfortable towing with it. Assuming the unladen trailer weight of 1000kg and a horse, tack and equipment weight of another 1000kg, you would be right on the limit and emergency braking, steering and downhill control could be badly affected.
 
You can with anything over 2000kg capacity really but having done that with a Volvo XC90 which was 2400kg and struggled on hills (with one horse) I’d not recommend it! I’ve gone back to a VW Touareg which is 3500kg and it’s amazing! It’s the second one we’ve had for towing they are great cars!
 
I have also towed with an X3 which was 2500 capacity I think, and it was great with one horse
But if you are in any doubt at all, go for the larger capacity. Hill starts and / or coming down steeper hills you will appreciate it.
Some of the really big cars (like the XC 90 above) have a relatively small engine and they are so heavy themselves that they don't have the poke for the up hills. I've just bought a Merc GLE and went for the bigger diesel engine for this reason (it is 3500kg with factory fitted towbar)
 
It isn't just the engine size, it's the kerbside weight - you really don't want your trailer to be pushing your car. I bought my Ssangyong Rexton because it had a published towing capacity of 3.5 tonnes (fixed towbar), or lower with the removeable towbar, and was 2/3 the price of the equivalent Discovery etc. I sold my trailer not too long after but it has been one of the best cars I have ever owned
