as we will soon have transport, I'm trying to come up with a few goals to aim for over the winter and I need some help :)

a little bit about us - I have a 20yo Dutch warmblood called jerry. he came to me last year after, for lack of a better word, breaking down and having panic attacks in the show ring. he would pick a fence and then refuse to go near it whether it was 1.30 or 60cms. when reprimanded or pushed he would rear and spin.

anyways, long story short, we've cut back on the jumping (now once a week) and done lots of flatwork to get him listening.
we've got him going forwards over courses at competitions and he's gone from getting eliminated to getting 4 faults (got a bit flat and tipped it but I can live with that at the moment )
so.. I have two goals but I'm seriously lacking in ideas at the moment :D

1) get a (double?) clear at 1m
2) do a prelim/novice dressage test

and now I'm stuck :p
I realise that both goals are for at competitions so has anyone got any I could try at home?

pizza and pasta and wine for suggestions as I'm in Roma at the moment but looking forwards to getting home tomorrow as I
miss my big ginger muppet :)
