So quite a few of you helped me, and gave me advice on my issue recently, so I thought I would post an update.
I had Andrew Reilly out yesterday to check the saddle that was fitted/checked by another master saddler. Andrew showed me where on my saddle there was a big lump, and then a big hole in the panel, sitting right on her back (yes, I should have checked it myself, but I am clueless with saddle fitting, and that's why I pay a professional!).
No wonder she was uncomfortable, and the saddle was slipping, I think, she was probably pushing it over to try and get that nasty lump away from her

He basically completely undid my saddle, had it in two pieces. He showed me a spot where it was slightly concave, and would have been uncomfortable when she was basculing, so he added a piece of felt to remove that. He put the saddle back together, I got on, and the saddle didn't move -yay!
I did ask him of he could fit the saddle with the sheepskin half pad as she is more comfortable in that (saddle lumps aside), and he said with her dreadful conformation, he was happy to do that.
He also added a leather loop onto my stirrup bar before he put my leather back on, and he was quote right, it kept my lower leg much more securely in place-who knew!!!
