... am I right in thinking the flaps are bit straighter cut than the T4 GP, and if so is it OK to jump in ? Thanks.

Yes they are, jumping is still possible in the cob saddle tho, as long as not overly high

Yes they are. My daughter jups fine in it, we've never even considered it an issue

Yes, I've jumped in one (but then again, I've jumped in a Wintec Pro Dressage, across country). I think most saddles with a knee roll can be jumped in.
