Are you sure the problem is bit related and jumping isn't causing some other discomfort that's manifesting itself in this way? Without wanting to sound like a prophet of doom, my horse behaved in exactly the same way (oddly enough the waterford gag is the only one he would go it). We tried everything and once we'd got him settled in the waterford really cracked on with the jumping - 3 months later he was lame. He was diagnosed with very early signs of navicular. He had 6 months off and has now (touch wood) been sound for 3 years but he's never really jumped since. All the rushing and head throwing was because he was in pain but as he's a real sweetie, rather than stopping, he wanted it over as soon as possible. We've popped the odd log out hacking since then and he doesn't do it now. We still need the waterford for exciting stuff like beach rides though!
