What cheek piece for my horse?

I've found out (over two years!) the only bit she is comfortable in is a Mullen mouth happy mouth bit. The bit I have is too big so I am going to buy another, she's currently in a loose ring. She can get a bit strong up to jumps and likes to ignore the bit at times and fiddles around with it sometimes, I was wondering if anyone thought a different cheek piece would be a better idea, as I've seen the same bit for sale in an eggbutt and hanging cheek. I was told to choose the loose ring in the first place because she can be a bit grabby and so she can relax into outline a bit easier

is the stainless steel mouthpiece as 'kind' as the plasticy happy mouth type? I am gentle with hands but sometimes catch her when she over Junps :(
