What does halter broken mean to you?

Is he with other foals or adult horses. I would be really worried about the feeding situation you describe if there are older horses with him. Out in the field with others he will always be able to choose them over you. Unfortunately the chances are you will actually be teaching him not to catch, rather than managing to catch him.
 
Hello Jinx, just read your post. I appreciate stabling isnt an option and boo to losing hiurs thats pants. My idea is this, is there anyone at your yard you can pal up with, and borrow their stable for a couple of hours whilst their horse is out? Brig him in - eventually ! - just for a couple of hours in borrowed stable. Then minimal handling to begin with and build it up gradually. If you were able t do this, I would check with your YO forst purely for courtesy. I know this will of course mean catching him first but have a read of that book mentioned earler and get excited about him again :) you're incredibly lucky to have a lovely colt and you will be fine, its all about handling and patience :) I've got a little 8 month old colt myself so PM me if you want any help or just a genrral chat :)

He's out with four 8-month olds and a three year old. Any horse can choose other horses over their handler if they want, they can choose grass over their handler if they want to! If a horse truly doesn't want to be caught, it won't be! Teaching him not to catch? How exactly? Do you think I chase him round and round in circles and then give up? Whether I have to be stood/sat/crouched in that field for ten minutes or two hours, I always finish on a good note, whether it's him taking an interest in the leadrope, or him taking an interest in me.

Jinx you have loads of time, years in fact. Tinner was stabled alone and it was still two weeks before I touched him, and probably three months or more before I touched him all over, and that was when he was sedated for castration. Your lad is obviously interested in the strange human in the field, just carry on being nice and he will come round.
