I hear it all the time in ads and stuff, but have never actually known what it means! i know its to do with a horse's jump, but what is it?

shows ability to jump large fences easily. It is most commonly said when a horse has an easy, effortless jump or more commonly those that actually over jump.
You could say a horse has 'scope' to burn or 'scope' to jump higher classes.

Yeah as Santa said. People tend to overuse it though IMO, like saying "can jump 3ft so very scopey" makes no sense...!
