So stuck

Want a doggy dog. You know, enjoys a game of fetch, eager to learn, smart.

Not long hair with tonnes of moulting
Medium energy requirements, not hectic collie spaniel etc.
Not a wimp in the cold
Medium to large size to come out with horses
 
Sounds like you need a Smooth Collie. Don’t be put off by the name, they are nothing like Border Collies.
Mother of Chickens will give you all the info or Google. They are awesome dogs and I can’t understand why they are on the vulnerable breeds list.
 
You can't really find a better medium/large dog than a Labrador, they will go all day if you need them to don't but require hours and hours of work to keep them sane, like a BC or Springer might. They usually have excellent temperaments and are very trainable. They do moult but you you won't find a dog that doesn't and they at least have short hair.

My rescue lab is a wimp in the cold! I prefer my collie at the horses as she doesn’t stray to go and find crap to eat! But depends on the individual collie with exercise needs and neurosis!

Another vote for asking a rescue what suitable dog they may have.

My friend had a staffie who used to hack out and was a great yard dog. But also loved sofa chills!

What about a smalish lurcher with not too much hair. I know people above have suggested whippets and greyhounds, but they do tend to be wimpy in the cold! But they are not hectic like collies and spaniels can be (and we used to have a springer and she was certainly 'hectic'!) But if you get a lurcher you hopefully will have the less hectic temperament but with a bit more hair to stop them being wimpy in the cold. But, to be honest, your two criteria of 'not long hair' and 'not be wimpy in the cold' rather contradict each other!
 
My whippets arent whimpy in the cold if they are moving and one refuses point blank to ever wear a coat, but they definitiely are if they are standing about. They are both awful about any sort of rain as well and refuse to set foot over the threshold if its any more than a drizzle.

I have a smooth collie, I will say though that they moult quite impressively-they have a double coat that protects them from the weather but that comes at a price. In the house he sleeps, outside he's up for as much or as little as you want to do. he's 23kg, very gentle, will fetch all day and is an awesome catcher of toys, he's pretty smart but mine wasn't socialised much as a pup so has taken a while to catch up training wise but he is great with dogs and people and especially good with OH's disabled daughter. never sick or sorry and they are a very healthy pure breed dog. I've no idea why they arent more popular, perfect family dog imo-not as rambunctious as labs/goldies can be, very easy energy wise and only very watered down collie traits-he is sensitive but not neurotic. I can't link to a photo right now.
