What next?!?!

Hi all

I have a 5yr old SJ mare who has been ‘off’ for the last 2/3 months but we just can’t quite put or finger on what’s wrong.
Back in May, she was winning her BS classes, jumping is what she loved, what she excelled at, but she started stopping for no reason and soon we were getting eliminated. Got the vet out ASAP and he did a lameness work up (flexion), flexibility test and back check, all of which were perfect. No soreness or anything to report on. We then went down the line of loss of confidence, but she hasn’t improved much or even been a shadow of the horse we had three months ago.
Got her scoped, she has stage 1 ulcers which are being treated with the weekly injections, but even the vet agrees, there is something else wrong.
In the last 3 days she’s become lethargic, depressed, bored. This is a hot SF horse who usually takes two of us to control on the ground, but this morning she didn’t even try it on. She hasn’t lost condition, but hasn’t built much either, still eating and drinking fine. But looks sad and ‘plants’ when being ridden, refusing to go forwards. Any previous experience of this type of change in personality? Over the last 6 months we’ve done muscular skeletal, hormone, gut checks, all of which have been treated if a problem has been found, but she still isn’t right.
Rapidly losing hope that we’ll ever get our SJ back

Assume saddle has been checked by someone qualified? One of ours stopped jumping and it was down to the saddle no longer fitting and another who started planting out hacking, which stopped when saddle was changed.

Yes, twice in the last 3 months. Fits perfectly apparently. Even tried another saddle and behaviour didn’t change.
