Balance saddles. They are brilliant - the company has a very horse-focussed philosophy and horses love the saddles. I wouldn't touch a Stubben with a barge pole.
I have a Thorowgood Hi-Wither GP on my TB for hacking and jumping and an old Albion Dressage for flatwork and dressage.
On little old Red I have an Albion WH that had been specially made for it's previous owner- it's a nice saddle- serge lined with suede seat and knees. I was very lucky to get it!
Another vote for Balance, Just bought one for my Section D and he loves it, it is also beautifully made and very comfortable. I ride my Connemara in a Heather Moffatt which he loves.
I have a Black Country Event Saddle for my ISH. It fits him beautifully and is super soft and comfy. When the saddle fitter put it on for me to try there was a huge difference in his way of going - much freer in the shoulders. It is apparently also very changeable as I was told by said master saddle that it could be rebuilt to any size Frank would change to.
