I have done some research but getting mixed views on what's legal and what is not. Like the title says-What simple /mild bits are legal in all disciplines and all levels of showing?

Short answer is nothing.
Snaffles are legal at BD up to grand prix so in theory your common egg butt jointed or mullen mouth would do, but not FEI, their rules require a double.
I'm no showing expert but I know you'd be expected to use 2 reins at higher levels.
Eventing and jumping, again, nationally I think a simple snaffle, I'm not sure if top level eventing dressage would require a double

Showing is complicated.
ponies is any snaffle (including wilkies) for lead rein, first ridden and novices, double or pelham for everything else.
Horses tends to be doubles/pelham for everything (including most novice classes) except some sports horse classes which are snaffles only (but not all of them).
Working hunter classes pretty much any bit goes but judge will take into account the severity of it.
