a french link and lozenge link eggbutt snaffles? I mean how do they work differently?

French link is a plate linked with a 'knot' of metal at either side of the plate, a lozenge is rounded without knots and *some* roll or spin- although they are normally referred to as barrels?! The action,TBH, is pretty similar

Lozenges are generally more anatomically shaped so should sit better on the tongue therefore being more comfortable for the horse.
