which bit for strong mare??

My 15.2 6 yr old thoroughbred schools well in a snaffle but its a different story when jumping, she brings the head up and turns into a mad horse, she loves jumping and is very bold but im having real trouble to get her to go into the fence at the pace i want, in an outline and balanced. she will trot in and canter last few strides but takes hold in mid air and i find it very hard to get her back or stop her.
Ive tried to persist in the snaffle and tried a dutch gag but thet brings her head into her chest too much and she cannot see the jumps properly. Shes just started working at 90cms doing grids and courses but would like something to get her back quicker and listening to me.
Also very scary doing x country because once she sets off its virtually impossible to get her back and i find my shoulder muscles trembling and aching after a short session. Please help!!
 
My daughter also hacks out in a snaffle but for jumping/xc/hunting now uses a NS Trans Universal after having the same issues as you. We dont use it with the leather curb as we have found she (the mare not the daughter!) just doesnt need it but its in the tack room just in case!

Why not try and get some lessons rather than putting in a stronger bit?

Grids grids grids - get her thinking, she will be forced to slow down in order to balance and pick her feet up. If she is jumping grids make them more technical and start really small (1 foot 6) and get her concentrating.

If she takes hold of the bit, try a waterford snaffle.
 
Sorry but it sounds without seeing her as though you need to take her back to pole work for a while to stop her rushing and build up slowly from that rather than overbitting her...
