My ISH mare is expecting a foal by Caretino Glory (Holstein) in the spring : he's an approved stallion with the AES. I'd like to support British breeding and register with a society that runs evaluation and grading shows : is the AES the best option? What about the SHGB? It all looks incredibly complicated when I look at their websites, so would value your thoughts/experience/advice, please!

If your mare is registered/graded with the Irish Draught on their Sports Register then you should be able to register foal as a part bred with them so that you can enter their classes too. If she is only with the SHB and not the breed, then you can register with them, they will accept the covering certificate I'm sure as it's from a registered stallion (sometimes, if they don't 'recognise' the stallion, even with a legitimate CC, they will put parentage unverified, which is what you don't want, so check they will accept him first and if necessary get it in writing!) Alternatively, register with the AES although I can't help you with gradings. Either way, it should be possible to overstamp the passport with the other society anyway but I don't know which would be the least expensive way to do it.

My mare is not graded as to me she is not of good enough quality. However, If I had a foal with good conformation and potential to use to breed from I would definitely have it graded.
