No videos yet but the new world champion in German Shepherds is Nitra vom Eisernen Kreuz, bred, owned and handled by is Nico Kertzinger of Germany.

Nitra is a daughter of Debby vom Eisernen Kreuz who won the worlds in 2017, also bred by Nico.
Nico handled Debby's father to a top ten finish in the German championships.
Nico handled her grandfather at world championships in 2010.
And he also handed her great grandfather at the world championships in 2003 when he was a teenager.
So....talent plus training plus genetics for more than 20 years!

Nitra is only the second female to win this competition since it was established in 1988 (it was the European championships previously) after her own mother.

Is there some reason that it’s usually won by dogs, as opposed to bitches?

Combination of things really, there's a perception that females aren't so resilient/are a bit more sensitive, also it's still pretty old fashioned in that many people keep the good females for breeding rather than competition.
Although I think Nitra has had a couple of litters.

ETA there was a huge buzz when Debby was mated to Nitra's father Hercules almost immediately after the WUSV in 2017, she was in season when she won and was one of the last dogs to compete and the atmosphere in the stadium was intense.
Turns out the buzz was well founded!

Hercules has one of the lowest ZW numbers possible (shows transmission of good hip scores). His father Chris Spod Lazov won the FCI world championships in 2013 and his owner's wife finished third this weekend with her own dog for Slovakia.

Of all the police dogs I’ve met the bitches have been tough dogs! Not sensitive at all

I mean everyone's mileage may vary, but there's more to it than just the job, travelling to worlds usually means days of driving, overnight ferries or in the case of some countries, long haul flights, and before they even step onto the field, acclimatisation to different weather and ground conditions and living out of a van/trailer/hotel room/holiday home.
All extra stressors.
