My lovely OH brought me and amazing matchy matchy XC set for xmas, he also brought me a XC stopwatch as a surpice, it was a lovely thought but I only ride unaffiliated and not sure whether I will ever need it, has anyone ever used 1 at unaffiliated events?

I think it depends on who is running the unaffiliated event as to whether you are allowed to use it.

So I would check with the organiser first :)

You wouldn't have any trouble selling it if you decide you don't need it.

Rules vary from event to event, so it's worth checking- although now BE allow stop watches at 80 I imagine lots of unaffiliated events that are run under BE rules will do the same. BRC have just changed their rules to allow stop watch use, so you can now use one at riding club horse trials too!
I've been using mine for training as well, it's helped me work on fitness for both me and my horse as it makes interval training a lot easier to track (e.g. Canter for 4 mins, walk for 2 etc.)
But if you find yourself not using it I think you'll be able to sell it easily - lots of people would be after one!
