A friend has an Arab who had a tendancy to bite, not over the stable door but when being tacked up/rugged etc - it was an ex trekking centre pony so maybe had been a little thoughtlessly treated in the past? - and she had tried as many things as she could think of to stop him biting, shouting, hitting, saying nothing etc etc.
Then someone advised her to go completely mental if he did it again, don't touch him but jump up and down, scream, flail arms around, as mad as she could get! She tried this (luckily she did warn the rest of us liveries first!) and the horse was suitably shocked to the core. He tried to bite just once more, a few days later, she did the same thing... hey presto, seven years later, he still doesn't bite.
Worth a try...
