It probably won't be much like what we do, which is more of an obedience exercise than actual 'real world' tracking but I have been out with the SAR team so I shall try and be of at least some assistance 
But the main thing is to leave the dogs at home for the first few lessons IMO - if the humans have no idea what they are doing, there is no point in bringing the dogs, teach them all the theory and the practise first and then introduce the dogs later. You'll need quite a bit of neutral land if it is going to be a group lesson for everybody to be able to space their tracks out and with as few distractions as poss in the beginning.
