What is a gentle squeeze in your hand does not necessarily translate to gentle in the horse's mouth when using a lever bit. With snaffles, what you give is what the horse gets. With a lever bit, your 'gentle' squeeze might be the equivalent of getting socked in the jaw for the horse.
