if got her to stop paying me would i be covered by her insurance. ive had a look and grooms insurance would cost me more than i get paid

Yes then you’d be covered IMO. Third party covers individuals handling horses in a non paid non professional way with owner’s permission. You might need to return the existing payments.

Maybe she could give you an unconnected gift later?

You would normally be covered by the insurance if doing it for no payment, but that does not mean that YO would still want you to do them. You would need to check with them also as the last thing you would want to do would be to make the YO fall out with the horses' owner, especially having already had an argument.

What is the usual arrangement for the DIY liveries if they are not able to do the horses themselves through illness or going away?

ETA - Ah, sorry, I found the answer on post 14. So friends are allowed to look after them without payment, so you would just need to inform YO that you are complying with their policy of no payment.
