You're probably not going to like this but you were silly to giv up what you had IMO. You had exactly what you were looking for by the sounds of it, and it had potential to become a paid position. Is there no way you could go back to what you were doing? It sounds like it was ideal if you were there 5 months, and it was after you lost your confidence.
I very much doubt anyone is going to pay you to spend time with their horses, as they'll likely feel they have to supervise you due to your nerves, even if they have a saint of a schoolmaster.
keep on at the riding schools, the more persistent you are in offering your help, or just going and spending an hour watching a lesson and/or wandering round the yard block petting the horses the more likely they are to give you a chance...You're going to have to sell yourself slightly love, so sell yourself in on the ground that you are extremely passionate about horses and keen to learn etc - at the moment you're being too negative and a little 'woe is me' which isn't going to help. Call them all again but make sure you're on a real high and in a positive frame of mind when you do. Stop as soon as it starts to go negative and pick up where you left off when you're in a positive mood again, you might find the response better.
