I've got a saddle for sale on FB and been asked if I will hold if for a week, if the person gives a deposit.

on the face of it I'm happy to do so, but is there anything I haven't considered or need to do to make this safe for both sides?

Tricky. If it's non refundable if she doesn't collect and pay the balance in a week's time, you haven't lost anything but if it's to hold the saddle until she comes to try it and will want her deposit back if she doesn't complete the sale, effectively you've wasted a week. If she's tried the saddle

I've had this and it's been a nightmare. Tried to behave with good Will and it went badly wrong.

I would be tempted to say that you will still market it. If they still want it and it's available in a week so be it. You may find they then just pay up.

Why would you? If someone wants to buy it i would let them. If it's still available when she wants it she can buy it. If she's desperate not to lose it she can buy it now. I just don't see the point of the hassle, for a saddle.
