i am under the impression that riders' red jackets are becoming less and less frequently seen on hunts and that riders are preferring to wear black or tweed. is this in fact the case and if so why is the red being worn less frequently?

In the hunts I've been on subscribers wear a coloured collar or no identification at all.

They're entitled to wear red coats.
Female masters wear navy coats with four brass hunt buttons and the collar on the hunt colour.
Male masters either red or black with 4 brass hunt buttons and the hunt collar.
Full subscribers the same but with 3 plain buttons unless they've been given their hunt buttons.

Obviously, this is traditionally. Nowadays, there can be various interpretations!

Only the hunt staff wear the red or pink jackets for autumn. After the Opening Meeting others wear it if entitled. Convention.
^^^ This was my understanding too, drummed into us from Pony Club. Also I think the hunt servants were entitled to either chop off the "ribbons" on the back of the velvet hunting caps which were worn back in the day (or tuck them in under), and were entitled to wear their black hunting boots with leather around the top edge of them. No-one else was.

Nowadays things seem a little more relaxed: and of course female hunt servants/MFH's are far more evident whereas years ago this was relatively unheard of!!

Probably the lack of wearing of the "hunting pink" is sadly a sign of the times, where hunt servants choose not to recognised out in the field as such and as such make themselves more of a target for those who do not support ANY form of hunting.
