After a few incidents recently, I'm looking into upping the security of my fields, specifically setting up cameras around gateways.

The fields are some way from the house, so no electricity or wifi nearby, so I'd need something battery operated. I'd ideally like motion activation and also the option to check it in real time - so presumably a dongle would be required.

Can anyone recommend anything? If it doesn't bankrupt me too much that would be a bonus!

You could look at Solar Equestrian [https://www.solarequestrian.co.uk/ ] and Rydale [https://horsemonitor.co.uk/ ]?
I haven't used either of these, but know about them because the track liveries I follow do use them so I've seen them on their pages.

The only reason I haven't gone with one of the above options is that I know, unfortunately, that solar panels and batteries happen to be extremely attractive. I don't know what sort of 'incidents' you've had but if they are the same as incidents I've had, you may have the same issue with all non-mains cameras (unless you can put them up very high).

The incidents involve people looking around for an access point to do a bit of 'camping'. That's my main concern at the moment, but there's enough trees about I might be able to find a creative way to hide it all.

Reolink do solar powered 4g cameras, I've not set mine up yet but @milliepops has had some good results with hers.
Yup very happy with mine so far, it ticks all the OPs boxes. I love reviewing what the motion sensor has recorded overnight before i get up in the morning and it's nice to check in during the day when I think of it.

Looks like there may be one that pans and tilts on the horizon.

https://uwatch.co.uk/ this was advertised recently in Practical poultry magazine and are approved by Secured by design and when I spoke to crime prevention officer in our area said to look for secured by design on products.
That website is dreadful on a mobile device ? can you stream the video or does it only record when triggered? I like watching my horses in the field when I feel like it (my camera was bought for foalwatch really so streaming was important).

That certainly sounds promising! How do you find the data usage? I'd largely be the same as you, mostly for over night monitoring and the odd day time check.

Well.... it came with a v sim (Vodafone) quoting £4 per month.... it doesn't appear to come with any usage quotas so we'll see but that's all I've paid!

As in, the contract is £4 per month, I looked all over but there seem to be no additional charges.
