I have a pigeon-toed mare bred from graded, sound parents. Vet thinks due to poor trimming as a foal. Is it unwise to consider breeding from her?

No but there are probably a million reasons not to.
Depends on why you want to
what you are looking to breed
Are you prepared to lose the mare foal or both
Are you prepared to PTS or keep forever a disabled or less than perfect foal
would you prefer a filly or colt or does it truly not matter
can you cope with the foal being smaller or bigger than expected
do you have a lot of money that you can afford to lose
do you have the time for a youngster
are you going to keep it or sell it
do you have facilities for mare and foal at weaning
will you have young sane but playful company for it
have excellent farrier with remedial experience
etc etc etc
On the otherhand choose a stallion that improves on your mare
has a superb temperament
is trainable and kind
is not heavier built than the mare it should always be blood over bone
make sure he is not more than a hand bigger
He is sound and has youngtock with talent in your field of competition in work
choose to compliment your mares talents
etc etc etc
Having a foal in your life is a very expensive nerve wracking joy but not for the feint hearted

Slight pigeon toes are an acceptable conformation flaw for me if everything else is good so it would depend on the degree of the turn in and how flat the horse lands

I forgiven horses being pigeon toed twice because they had such nice temperaments both went spectacularly wrong it’s not a fault I would ever forgive now .

my mare is pigeon toed which improves with fitness but being critical her legs are also back at the knee. People asked if I was going to put her in foal when she was off work with (unrelated) injury and I said no because of that. is yours only pigeon toed or is there anything else associated with it?

It would depend entirely on the rest of the mare and what sort you were hoping to breed. And why of course.

Visually it’s not too bad, but farrier doesn’t think much of her. Vet however, thinks that as her parents were both sound and graded, genetically she should be ok.

Unless the mare would grade, no.
