He gets half on the floor and half in the haybar, this way he always eats with his head down (COPD case) plus he eats the bit on the floor first and the haybar later so nothing gets trampled into the bed...

I have both, a leather Albion and a Thorowgood High Wither. Love them both to bits for different reasons but if I was to have only one saddle, I'd probably go for the synthetic as it is light, can be fitted and refitted several times, is dead easy to maintain and does not mind a slightly damp...
Same as above, keep him active (i.e. don't let him slop along) and try to stay on good ground.
I'd also use knee boots (I use them on mine when he is a bit stumbly the week before farrier is due).
