I would put the mare in with the calmest gelding with at least one field between the two pairs. I would also keep the 2 boys in when you turn the mare and gelding out for the first time so not all 4 horses are going nuts at once. when they are settled put the boys out.

Have you asked the yards if they will allow you to rent a stable but keep out 24/7. Though most yards round my way don't do DIY (South East) they would allow people to keep there horses out 24/7 if they desired.
I haven't moved to France but I worked in a feed shop where we had a customer who used to drive over from france once a month to buy his horse food as it was so expensive over there. He obviously lived in northern France so could be different in the south.
The horses from willowbrook are generally very green young horses brought over from Ireland so unless your experienced with dealing with young green horses who need a firm hand then I would look elsewhere. Nice enough horses just never seem to be for the novice horse owner.
