How do I word it... is it justified... is it just a rant?

Ok there are tonnes of reasons there to get shut of them but tbh you don’t need an excuse, just say you want your yard to yourself.. or even more simple tell them I want you to leave now… a months notice and they are gone.
As far as the mental health blackmail… the answer to this is, your messiness and lack of consideration for my needs is incredibly bad for my mental health which is why I need you to leave now

Assuming they have a contract, just serve the notice period. I don't see why you need to make up a reason. This person sounds like a complete nightmare and would have been chucked off a commercial livery yard a long time ago.
When they came I was a running a „proper“ yard so had a proper contract drawn up.

When I am literally working two jobs and getting home after a 14 hour day to do their horse when they have had all day to do their horse as they have no job I get really pissed. Also when I am not working I want to enjoy my yard and horses, not sort stiff out for others
A yard costs a lot of money to buy and maintain, there is no prerogative to share your space with anyone… you need to grow a set and get shut asap… big breath… do it and you will probably feel guilty for a few days but after that just think, you can do your own horses in your own way with out any of that annoyance that you are having every single day….

Very sorry for you. They have absolutely GOT to go and very soon the soonest your contract allows, I'm sure they have broken many of the terms in your contract do they know what notice time the contract says? In the meantime like tomorrow or at weekend remove everything of yours off the yard into a locked building or garage. DO IT it's time to stop being soft.

by point two I would have thrown them out. you've been too accommodating and they have taken the p•ss. is their a contract, can you use that to get them to leave. if not, I would print up a list of yard rules and hand them out to everyone, with a sentence at the end about people being asked to leave if they break them. I'd stick on every single one of the issues above. and if they do anything again id give them notice. and say basically nothing apart from they broke the rules. keep it very unemotional, just say they broke rules 2,3 and 4 etc and cite the notice clause.

A lot of the things like times of yard opening and guests to yard, insurance etc are all covered in the contract so there are rules that are on writing that have been broken.

Do you have gates you can lock? I'd start by telling her the gates will be locked at 9pm, and if she hasn't done her horse by then she won't be allowed in and you will charge £xxx for putting to bed.
I have brought up things again and again, reminded of things.
Told them to clear up dog shit in tack room. I have been polite, said things face to face and in messages. In winter I brought up the hay thing and explained why it was annoying and initially was met with excuses and then tears, then not showing up to do horse...
